Aloo Gobi Recipe - Aloo Gobi Dry - How to make aloo gobi

Aloo Gobi is a great combination subji, perfect as sidedish for rotis! I made it dry to go with rotis and rice with dal.You can even make it as gravy as per your preference.

Today is an eventful day as mittu is joining her playschool...though she joined formally on vijayadasami day her regular classes starts today. I am waiting for the 3 hrs to get over to see her reactions and hear the stories :) I am sure everyone is busy with diwali preparations, aloo gobi is a easy side dish that goes well with rotis and rice, do try this.
Aloo Gobi Recipe
Aloo Gobi - Ingredients
  • Potato (Aloo) - 2 medium sized
  • Cauliflower (Gobi) - 1 flower
  • Jeera - 1.5 tsp
  • Ginger garlic paste - 1 tsp
  • Onion - 1 chopped finely
  • Tomato - 1 chopped roughly
  • Turmeric powder - a generous pinch
  • Red chilli powder - 1 tsp
  • Garam masala powder - 1.5 tsp (optional)
  • Coriander leaves - 2 tsp
  • Salt- as required
  • Oil - 2 tsp

Aloo Gobi Recipe
1.Pressure cook potatoes upto 3 whistles until soft. Peel of the skin, chop them into cubes and keep aside.Cook cauliflower florets in water with salt and turmeric powder until soft yet firm enough to bite.Heat oil in a pan, add jeera allow it to crackle. Add ginger garlic paste, onions fry till slightly browned. Aloo Gobi Recipe - Step12.Then add tomatoes cook until raw smell leaves.Now add turmeric, red chilli, garam masala powder and required salt. Saute for 3 mins.
Aloo Gobi Recipe - Step23.Add cauliflower and potatoes, mix well. Cook until the veggies absorb the masalas, it may take 2-3 mins. Adjust salt at this stage. Garnish with coriander leaves and switch off.

Serve hot with rotis or rice. It goes well even with any variety rice.

    My Notes:
    • Make sure gobi and aloo both are cooked at the same time firm enough to bite, they should not be mushy.
    • You can use tomato puree and make it gravy kind.
    • This is apt with naan, rotis or even any variety rice.

    This is the easiest sidedish you can make when you have both the veggies in hand. Both the veggies are my favourite so this recipe gives a regular attendance in our routine menu.
